what with this being the time of year for good hot chili, i thought we might all exchange our favorite chili recipes...i know, sounds domestic, but wtf, i like chili :D

redneck chili recipe.....
2 lbs ground top sirloin
4 cps assorted pinto & kidney beans
4 tbs chili powder
2 cans stewed tomatoes
1 can tomato sauce
1 small can diced green chili's
5 good sized jalapeno's
1 small jabanero
12 pk beer of your choice (i like mich amberbock, myself)
let the beans soak overnight for a quicker finish....brown the meat, frying it with the green chili and 2 of the jalapeno's over a medium flame, or mid-to upper mid if yer usin an electric stove...as it cooks, drain n rinse the beans off, put em in the biggest stock pan ya got...add the chili powder, stewed tomatoes, remaining jalapenoes, jabanero, and 2 bottles of beer on low heat, letting it simmer for at least 2 hrs....add the meat to the mixture (sometimes i'll add a shot of jd no.7 just for a kicker) and continue to simmer for another 2 hrs while you drink the remaining beer....then add the tomato sauce to thicken, and enjoy:D

Anyway....

500g diced beef (1lb)
1 large onion
20g cumin (1oz)
40g chilli powder(1.5oz)
3 cloves garlic
4 fresh green chilli's (more to taste)
2 tins chopped tomato's (or 500ml or 1 pint passata)
small bottle of corona.

Chop the onion and garlic. Fry until soft. transfer to large stew pot.

Mix together cumin and chilli powder. coat the beef with the mixture and fry on high heat to seal. again, into the pot.

Deseed the peppers, finely chop and into the pot, along with the tomatoes (or passata) and beer.

Cook in the oven on a low heat (160C) for around 5 hours.

lmfaoo...thanks, ee...i'll give it a shot next time i make chili...gonna be a while...my recipe makes around 8-10 quarts :rolleyes:

ain't southern, mang...i'm a high mountain redneck from colorado :cool:
besides, i gotta keep it so's my wife can eat it...she has a hiatal hernia (sp) that won't let her eat too spicy of food

I take a packet or three of Carroll Shelby's chili mix.

Take a big onion in a big pot (about a gallon for every 2lb of ground beef) and brown it. Take your time with this step so that the onions get nice and brown and translucent. Run a good half of a globe of garlic through a garlic press and add that after the onions are just about done. Get some good color on them but don't burn the garlic.

Deglaze the pan with some apple cider vinegar or other flavorful liquid. Chicken broth, beer, or sherry work well too.

Take two pounds of ground beef for each package and add it to the pan. Stir it almost constantly so that no big clumps form. That makes the chili smoother. If you've got a lot of ground beef (more than a few inches up from the bottom of the pan), add a can of tomato sauce so it cooks quicker and more evenly.

After the beef is browned, throw in whatever spices you like. It's not an exact science, you have to have a feel for what you're trying to do.

Stir that up real good and add a few big cans of kidney beans. You should be able to get really huge cans, they're probably about 8" tall and 5" in diameter. I don't remember the exact size, but the point is you're going to add in way more kidney beans than you think you need. I use one can per pound of beef, but I most recently used only four cans for six pounds of beef and that was acceptable. Put the whole can in, liquid and all.

Then you can add in whatever else you want. I like mushrooms and peppers. Slice your mushrooms and cut your peppers into 3/4" dice. You can also put some cream or evaporated milk in there to make it creamy. I also like to mix up some masa flour with a cup of cold water. Stir it up to get all the lumps out and add it in. That will thicken the chili a bit. Keep it simmering for a few more minutes to cook the flour and serve.

Six pounds of beef should be just enough to feed a family of two... for a month. :D

3 sweet peppers (chopped)
3 jalapenos (chopped)
beef stock
1 tsp ground oregano
1 tsp cumin
3 tbs chilli powder
paprika
cayenne
(any other spices that blow your socks off)

Top with cheese & green onions.
Add cornbread or crackers (if you like)
