Anything Coltrane. John Coltrane is, by most, considered the king of jazz.
Only Coltrane could take "These are a few of my favorite things" from the "Sound of Music' and make it true jazz. Sirius Radio used to play an hour of "Trane Tracks" every night. That's how standard his jazz is.
Also check out Miles Davis. Magic with the trumpet. He's another classic.
Then there is Thelonius Monk. That cat is classic.
Anything on the "Blue Note" label usually is terrific.
Cab Calloway has good swing. He took "April in Paris" and made it swing pretty damn good.
I could go on for hours. I've got over 1000 jazz CD's. And that's NO bullshit.
I've been into jazz since the 80's.
Not sure how far back and how classic you want to go.
If you want to border on "BIG BAND" and "BIG BAND SWING" check out Woody Herman. Especially his classic album "Giant Steps"
Les Elgart is also a must listen in this genre of Jazz.
I try and avoid the new jazz guys that emerged in the 80's only because they were OVERPLAYED by college radio stations when they appeared.
If you have not heard them, you may like them.
David Sanborn was a popular jazz saxaphonist that emerged in the 80's. His album "Hideaway" is a classic.
Candy Dulfer was also popular, because she was a hot female sax player, and because she had decent jazz.
But the 80's jazz had a bit of new age flair so I never really cared for it, but you may LOVE it. Worth a listen.
Somtimes I am blown away by 90's guys like Winton Marsallas. I sometimes hear a tune from them and am blown away that it is modern jazz. These boys can do some awesome jazz.
You also need to check out DAVE BRUBECK. His CLASSIC QUARTET (Drum, Bass, Piano, Sax) was the standard in the late 50's and 60's. "Take the A Train" and "Take Five" are probably the most played jazz classics of all time.
Paul Desmond (his Saxaphonist) broke off from Brubeck and did some great stuff on his own.
Want some really relaxing jazz that will remind you of the "Charlie Brown" classic cartoons of the 60's? Listen to Vince Guaraldi.
He was commissioned to do the Charlie Brown music soundtrack because of his classic and mellow TRIO jazz sound (Bass, Drums, Piano). "Skating" is the most mellow. It was used during the ice skating scenes in Charlie Brown. His most famous piece is "Cast your fate to the wind". You'll probably recognize it. It borders a bit on swing and Bossa Nova. Timeless tune.

Blues is a very specific sect and an offshoot of Jazz.
Jazz is open and more intrinsic in what it offers for variety. Blues/Swing/NewAge.
If you want to try Blues, try Kenny Wayne Shepherd. I like his tune "Blue on Black"
Stick with classic Jazz, Carrot. Then go into Blues if you want to experiment with that. I can only take Blues for a short time. It's not for everyone.
